Promise you can’t taste that one ingredient… These 4-ingredient peanut butter cookie dough blondies are made with chickpeas, peanut butter, maple syrup, and spices, baked to perfection, and mixed with chocolate chips for a delicious, healthy treat.
To a blender, add 1 cup rinsed and drained chickpeas, 1/2 cup creamy salted peanut butter, 1/3 cup maple syrup, and a pinch each of baking powder, cinnamon, and sea salt. Mix everything on high until a smooth batter forms. Transfer the batter to a bowl and stir through chocolate chips. Transfer the batter to a brownie tin and bake at 350F for 20-22 minutes. Let cool before slicing (or drizzling with chocolate!). These blondies are best enjoyed either cold or slightly warmed up in the microwave.
