Blueberry Chocolate Chip Banana Bread

Set the oven to 350F and grease a loaf tin. In a small microwave safe bowl, add about 1/2 cup frozen blueberries and microwave in four 30 second increments, stirring and mashing in between. You’ll want the blueberries to be soft and there to be juice present, but keeping some whole for texture. Place aside. In a large bowl, add the wet ingredients (mashed bananas, melted coconut oil, maple syrup, egg, vanilla extract) and mix until smooth, then stir through the dry ingredients (gluten-free flour blend, almond flour, baking powder, sea salt, cinnamon). Fold everything together until uniform (careful not to over mix). Fold the chocolate chips and blueberry mash into the batter. Transfer to the prepared pan, top with more chocolate, and bake for 35-40 min or until golden brown. Let cool completely before slicing.
