Chocolate Cake Mix Cookies

Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper. In a bowl, add 2 eggs and 1/4 cup olive oil. Whisk until well-combined, then add 1 box of @simplemills almond flour chocolate cake mix. Mix until a batter forms. Cover the bowl and set it in the fridge to firm for about 30 minutes. After chilling, use a cookie scoop to scoop dough onto the prepared sheet. Roll out each ball and press the top into some sprinkles before placing them back down. Bake for about 12 minutes (these will spread quite a bit, so space evenly). Let cool completely before eating!
