Add all of the ingredients to a bowl (minus the chopped chocolate) and mix until well combined. Stir the chopped chocolate through. Use a cookie scoop to scoop the batter into balls onto a plate. Roll into balls and place in the fridge to set for an hour before coating.

For the chocolate coating, melt 2 dark chocolate bars. Melt them in the microwave in two 30-second increments, stirring in between. Once smooth, dunk each cookie dough ball until fully coated, then place onto a plate. Transfer to the freezer to harden for at least an hour before enjoying!
