Chocolate Glazed Munchkins

Set oven to 350 degrees F (175 C) and grease a mini muffin pan. Using a hand mixer, beat the wet ingredients together (melted vegan butter, olive oil, coconut sugar, eggs, unsweetened almond milk, mashed sweet potato, vanilla). Add dry ingredients on top (cacao powder, brown rice flour, pinch of salt, pinch of baking powder) and beat again until a thick batter forms. Using a cookie scoop, drop batter into the prepared mini muffin pan and bake for about 12-15 minutes. Let cool for a few minutes before dipping in the glaze. For the glaze, combine 1/3 cup powdered sugar and 3 tbsp melted coconut oil. Roll each muffin into the glaze and allow to set in the fridge before serving.
