Creamy Tahini Broccoli Crunch Salad

For the salad: Add finely chopped broccoli florets, shredded carrots, diced red onion, rinsed and drained canned chickpeas, chopped cilantro, sunflower seeds, chopped almonds, and craisins or raisins to a large serving bowl.

For the creamy tahini dressing: In a separate bowl, combine tahini, dijon mustard, lemon juice, honey, cumin, curry powder, turmeric, and sea salt. Add enough water to thin the dressing to your desired consistency.

Assembly: Pour the creamy tahini dressing over the salad ingredients in the large serving bowl and toss well to combine. For best flavor, let the salad sit for at least an hour or even overnight, allowing the vegetables to absorb the dressing. Serve cold and enjoy!
