Creamy Tahini Broccoli Pasta Salad

Begin by cooking your pasta according to package instructions, then set aside. Next, steam your broccoli in the microwave until cooked. To a large mixing bowl, add the romaine, broccoli, pasta, and chickpeas. Now prepare the dressing: blend the cottage cheese, tahini, garlic powder, vinegar, lemon juice, and olive oil until smooth. If you prefer a thinner dressing, feel free to add 1-2 tbsp water. Once you've reached the desired texture, add the dressing to the bowl and mix everything thoroughly. This salad will last in the fridge for 3-5 days.
