Dad's Secret Fluffy Pancakes with Whipped Egg Whites

Crack two egg whites into a clean bowl and use an electric mixer to whip them until stiff peaks form. In a separate bowl, combine the 1/3 cup Birch Benders paleo pancake mix, 2 tablespoons whole wheat flour, and 1/3 cup water, mixing until just combined. Gently and slowly fold the whipped egg whites into the pancake batter until there are no streaks of egg white remaining. Heat a lightly oiled griddle or non-stick pan over medium heat. Pour or scoop desired amounts of batter onto the hot surface. Cook for 2-3 minutes per side, or until golden brown and cooked through. Serve immediately.
