One of those recipes that has been in my sweet treat rotation for YEARS and never fails to hit the spot. I love these in the morning before a workout or before bed as dessert.

Instructions

To a bowl, add 1/2 cup creamy salted peanut butter, 1/3 cup maple syrup, 1/3 cup cacao powder, and a pinch of sea salt. Mix everything on high until a smooth batter forms. Then, add 1/2 cup of rolled oats, stir through, and then another 1/2 cup of oats for a total of 1 cup. Transfer the dough to a parchment paper-lined plate and shape into cookies. Freeze for at least an hour or until set. Optional: dunk them in melted chocolate at this point (just place back in the freezer again to harden). When ready to eat, let thaw for a few minutes and enjoy!
