Giant Single-Serve Vegan Lemon Drop Soft Baked Cookie

In a small bowl, mix together the wet ingredients: 1 tbsp olive oil, 1 tbsp maple syrup, 1 tbsp lemon juice, and a splash of vanilla. In a separate bowl, mix the dry ingredients: 1/4 cup oat flour, 1 tbsp coconut flour, a pinch of baking powder, and a pinch of salt. Add the dry mix to the wet, stirring until a thick, sticky batter forms. Roll the batter into a ball and place it on a cookie sheet. Bake at 350°F (175°C) for 8-10 minutes. A slightly underdone cookie is preferred. Let the cookie cool on the stove while you prepare the glaze. For the glaze, combine 3 tbsp powdered sugar with a tiny splash of almond milk and some lemon zest, mixing until thick. Once the cookie has cooled, pour the glaze over it and set it in the fridge for a half hour to set.
