Greek Inspired Roasted Veggie Warm Grain Bowl

First, prepare all your main bowl ingredients: massage kale (you can toss it in a high protein yogurt dressing), oven roast red peppers, chop cucumbers, dice red onion, oven roast artichoke hearts, crumble feta, and cook quinoa.

Next, prepare the hummus vinaigrette: whisk 1/4 cup garlic hummus (if using classic hummus, add some garlic powder for flavor), 4 tbsp olive oil, and 1 tbsp water together until creamy. Adjust the amount of water to achieve your desired consistency.

Finally, assemble the bowl by combining the cooked quinoa, prepared kale, roasted red peppers, chopped cucumbers, diced red onion, roasted artichoke hearts, and crumbled feta. Drizzle generously with the hummus vinaigrette. This bowl can be served hot or cold!
