Green Goddess Summer Pasta Salad

Start by cooking your pasta according to the package directions. The one mentioned boiled for 7 minutes, but 5 minutes was found to be perfect. Once the noodles are done cooking, drain and rinse with cold water. Add the cooked pasta to a bowl. Add the following to the bowl: diced red onion, diced green onion, chopped parsley, cucumber slices, and avocado chunks. Toss everything together. Then, prepare the lemon pesto: use a store-bought basil pesto and add in 1/4 cup lemon juice and a pinch of water to thin it to a runny, thin consistency. Mix everything (pasta and vegetables) until uniform with the lemon pesto. Serve cold. This will last in the fridge for 2-3 days.
