Hidden Veggie Mac & Cheese

Roast the veggies tossed in olive oil and sea salt on 400F for 25 min or until soft/fragrant. Add to a blender with the cream cheese, minced garlic, and broth and blend until smooth. Transfer the sauce to a jar and keep in the fridge until you’re ready to eat. To prepare, cook pasta according to package instructions, drain & rinse with cold water, add back to the pot and pour the sauce in. Cook on medium heat with frequent stirring until hot and the pasta is coated in sauce (about 2-3 min). At the very end, toss in the shredded cheese to melt in before serving and enjoying!
