High Protein Avocado Grilled Cheese

For the high protein avocado mash: Mash the large ripe avocado, 1 cup of rinsed and drained canned white beans, 2 tbsp dijon mustard, sea salt, and garlic powder together based on desired texture. You can leave some beans more whole if you'd like, but a uniform mash is preferred.

To assemble and cook the sandwich: Toast two slices of sourdough to your liking. Spread/layer pesto of choice, two slices of cheese (e.g., vegan provolone), the high protein avocado mash, and arugula on the toast. Sandwich the pieces together. Brush both sides of the sandwich with butter or oil of choice. Cook on the stovetop for 2-3 minutes on each side or until crispy and the cheese has melted. Slice and enjoy!
