High Protein Vegan Barbecue Tofu Bowl

For the Barbecue Tofu: Slice the tofu block into squares and place them in a bowl. Cover the tofu with 1 tbsp coconut aminos, 3 tbsp barbecue sauce, 1 tbsp rice vinegar, garlic powder, and sea salt. Toss until the tofu is well coated and let it sit for a few minutes to marinate. Transfer the marinated tofu to a parchment paper-lined baking sheet and bake at 400F for 20 minutes or until golden brown.

For the Garlic Tahini Dressing: Combine 1/4 cup tahini, sea salt, garlic powder, lemon juice, olive oil, and water. Mix until well combined and thin with water to achieve your desired consistency.

To Serve: Pair the barbecue tofu with sautéed greens, chickpeas, roasted seed mix (sesame and sunflower), and the garlic tahini dressing.
