Lemon Olive Oil Loaf

Preheat the oven to 350F and grease a cake tin. In a mixing bowl, combine the eggs, syrup, milk, and olive oil and whisk until uniform. Then add in the dry ingredients (flours, baking powder, and sea salt) and mix until smooth. Transfer the batter to the cake pan and bake for 30-35 minutes. Remove from oven and let cool completely before icing. To ice, I just mixed 1 cup powdered sugar with 1 tbsp lemon juice and 1 tbsp oat milk. Mix until thin and runny, then pour over the loaf. Top with lemon slices and let set in the fridge before slicing.
