Maple Dijon Apple Crunch Salad

For the salad: Add shredded brussel sprouts, chopped arugula, diced apples, diced red onion, candied pecans, craisins, and crumbled goat cheese to a large serving bowl.

For the maple dijon dressing: In a separate bowl, whisk together plain unsweetened cashew yogurt, dijon mustard, maple syrup, olive oil, sea salt, garlic powder, and onion powder until well combined.

Assembly: Pour the dressing over the salad mixture and toss to combine. For best flavor, allow the salad to sit for an hour or even overnight in the refrigerator, giving the vegetables time to absorb the dressing. Serve cold and enjoy.
