No Bake Vegan Sweet & Salty Slice

Crush 1 cup of LesserEvil Snacks celebration popcorn into a mostly-crushed powder (you can use a food processor, but the author prefers by hand to keep some texture). Transfer to a bowl. To the crushed popcorn, add 1/2 cup creamy salted peanut butter, 1/3 cup maple syrup, and 1/2 cup almond flour. Give everything a few good stirs to ensure it’s uniformly mixed. Transfer the mixture to a parchment paper lined loaf pan and place in the fridge to harden (about 30 minutes). Once set, top with melted dark chocolate (using 1 cup of dark chocolate chips mixed with 1 tbsp coconut oil, melted in two 30 second microwave increments with stirring in between) and crushed gluten free mini pretzels. Place back in the fridge to harden for a few minutes, slice, and enjoy!
