Oatmeal Banana Bread Bars with Chocolate Cream Cheese Icing

For the bars:

Blend 1 ripe banana, 1/4 cup cashew butter, 2 tablespoons coconut oil, 1/4 cup maple syrup, 1 egg, and vanilla in a food processor until well combined. Then add 2 cups rolled oats, a pinch of sea salt, a pinch of baking powder, and cinnamon. Blend everything until well combined and oats are mostly chopped fine (but still bigger pieces for texture). Pour batter into a greased brownie pan and bake at 350°F for about 15-20 minutes.

For the cream cheese icing:

Melt 1/4 cup chocolate chips and 1 tablespoon coconut oil together in the microwave (45 seconds). It won’t be fully melted, but this is fine, just stir until well combined (should be a few seconds). Stir in 1/4 cup @kitehill plain cream cheese and let mixture set in the fridge for a few minutes.

Assembly:

Once bars are done and cooled, spread frosting on top and add crushed pecans (optional)! Set bars in the fridge for a few minutes to solidify and enjoy!
