I’ve been making this one pan dinner every night this week. And of course, the one night I’m going out to eat I remember to share it 😩 I love this bowl because it’s super flavorful and the ingredient combos are pretty much endless. The one thing that doesn’t change? Warm crispy sweet potato chunks with melty @kitehillfoods cream cheese 🤤 the besttttttt eva 💥

What you need

olive oil

1 fl oz olive oil

broccoli

greens

1 bunch greens

yellow squash

1 yellow squash

black beans

onion

carrot

vegan cream cheese

1 oz vegan cream cheese

fine sea salt

1 tsp fine sea salt

sweet potato

Instructions

Line a cookie sheet with parchment paper and set oven to 350 degrees F. Toss sweet potato chunks with lots of olive oil and sea salt and spread on half the pan. Roast for about 25 minutes, flipping halfway through. After this time, add the rest of the veggies (onions, yellow squash, broccoli, and carrots) to the pan and toss in oil and salt. Roast for 20 more minutes. Serve with greens, @betterbeanco black beans, and @kitehillfoods cream cheese.
