Instructions

To a food processor add: 1 cup rinsed and drained chickpeas, 1 ripe mashed banana, 1/3 cup maple syrup, 1/4 cup creamy salted peanut butter, 1/3 cup vanilla protein powder of choice (can also sub oat flour here instead), and a pinch each of baking powder, cinnamon, and sea salt. Mix everything on high until a smooth batter forms. If the batter is too runny, add more protein powder or flour as needed. If using, pulse in a few handfuls of chocolate chips. Transfer the batter to a brownie tin and bake at 350F for 30 minutes or until golden brown. Let cool completely before slicing! These blondies are best enjoyed at room temperature or slightly warmed up in the microwave.
