Looking for a last-minute dessert for Thanksgiving? These pumpkin spiced fluffy chocolate chip cookies are inspired by olive oil cookies and feature a blend of almond and coconut flours, pumpkin puree, and warm spices, baked until just under-done.
Blend olive oil, coconut sugar, egg, pumpkin puree, and vanilla together in a food processor until smooth and well-combined. Then add almond flour, coconut flour, sea salt, cinnamon, and a pinch of baking soda. Blend again until a thick, rollable dough forms. If the dough is too runny, add another tablespoon of coconut flour. Add chocolate chips of choice and roll batter into balls, placing them on a well-greased cookie sheet. Bake for about 12 minutes (take them out a little under-done).
