Instructions

First, prepare the chocolate chia seed pudding: In a bowl, combine 1/2 cup chia seeds, 1 cup coconut milk, 3 tbsp cacao powder, 3 tbsp maple syrup, a pinch of sea salt, a splash of vanilla, and a dash of cinnamon. Stir well until all ingredients are combined. Cover and refrigerate for at least 2 hours, or preferably overnight, until the pudding has thickened.

Once the chia pudding is ready, toast the almond bread slices to your desired crispness. Spread creamy peanut butter evenly over the toasted bread. Top generously with the prepared chocolate chia seed pudding. Finish with a sprinkle of cacao nibs and a drizzle of honey.
