S’mores Cookies

Set the oven to 350°F (175°C) and line a cookie sheet with parchment paper. In a bowl, add 1 egg, 1/3 cup coconut sugar, 1/3 cup cashew butter, 1/4 cup melted and cooled coconut oil, and a splash of vanilla, then mix until well combined. In a separate bowl, add and mix 1 cup almond flour, a pinch of baking powder, and a pinch of sea salt. Add the wet ingredients to the dry ingredients and mix until a dough forms. Stir through chocolate chips of choice and mini marshmallows of choice. Once mix-ins are evenly stirred through, use a cookie scoop to drop the dough onto the sheet. Bake for 12-15 minutes or until golden brown, then let cool completely before enjoying.
