Soft-Baked Sugar Cookie Bars

Preheat your oven to 350F and prepare a small baking dish. To a mixing bowl, add the softened butter, sugar, egg, and vanilla. Use a hand mixer to whisk together until fluffy and smooth, about 2-3 minutes. Then add in the remaining bar ingredients and fold everything together until a dough forms. You may have to get in there with your hands, but be patient, it’ll form I promise! Transfer dough to the baking dish and bake for 25 minutes or until golden brown. Let cool completely before frosting (mix the powdered sugar with the milk until a glaze forms, then toss in the softened butter and whisk until a frosting forms. Spread the frosting over the cooled bars, top with sprinkles, and place in the fridge for set for a few minutes. Slice and enjoy!
