Strawberry Glazed Lemon Olive Oil Cake

Preheat the oven to 350F and prepare a cake or brownie tin. To a standing mixer (can also use a hand mixer), add the olive oil and butter and beat for 2-3 minutes. Next add in the sugar and beat again until well combined. Add the eggs and vanilla and mix for 3-4 minutes or until the batter is fluffy. Set aside and prepare the milk mixture by adding the lemon juice to the milk and whisk until well combined. Set aside. To the cake batter mixture add in the flour, baking powder, and salt. Add the milk mixture in 1/3 cup increments, stirring in between each addition. Once a smooth, uniform batter forms, transfer it to the tin you’re using and bake for 30-35 min or until golden brown. Let cool COMPLETELY before icing!

Icing is just freeze dried strawberries pulsed into a powder, powdered sugar, and a splash of milk!
