Sugar Cookie Banana Bread

Preheat oven to 350F and prepare a loaf pan. Mix the wet ingredients (mashed bananas, eggs, olive oil, maple syrup, brown sugar, almond extract) together until well-combined. In a separate bowl, mix the dry ingredients (almond flour, oat flour, sea salt, baking powder, cinnamon) together. Add the dry mixture to the wet and fold until uniform. Stir through the sprinkles, then transfer batter to the prepared loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean. Let cool completely before slicing!
