Sweet Potato Nut Butter Brownies

To make the brownies: Steam one large or two medium sweet potatoes (wrap them in damp paper towels and microwave for 8-10 min depending on the size). Scrape out the inside and blend with a splash of water until creamy. Transfer to a mixing bowl and mix in half a jar of peanut butter. Once it’s sticky and well mixed, throw in some heaping spoons of cacao powder. Mix really well until a dough forms. If it’s too mushy/doesn’t hold together, sprinkle in some coconut flour to absorb some liquid until a dough ball forms. Transfer to a well greased skillet and bake on 350°F for about 20 minutes. Let cool completely and cut into slices. Put them in the fridge while you make the icing.

To make the icing: Melt half a bag of chocolate chips with some coconut milk on low heat and stir constantly until thick and creamy. Dollop icing on each slice and place back in the fridge. Let cool until icing is hard. Then you’re good to go!
