Sweet Potato Spinach Muffins

Heat the oven to 400°F (200°C) and grease a muffin tin. Stir dry ingredients together until well-combined, then form a hole in the middle of the mix. Add wet ingredients to a food processor and blend until completely smooth. Pour the wet ingredients into the well of the dry ingredients, then fold together until well-combined. In a small bowl, add the topping ingredients together and mix to combine. Spoon the batter into the tin and top each muffin with a couple of teaspoons of the topping. Bake for 25 minutes and let cool completely before serving.
