A simple and healthy vegan recipe for fudge brownie cups made with dates, tahini, cacao powder, and chocolate protein powder, topped with melted chocolate. Perfect as a healthy dessert or snack, and great for satisfying sweet cravings.
Soak 6-8 large pitted dates in hot water for 10 minutes, then drain. Add the softened dates, 1/2 cup tahini, 4 tbsp cacao powder, and 1 scoop chocolate protein powder (or 2 more tbsp cacao powder) to a blender. Blend until a well-crumbly dough forms. Transfer the crumble to a silicone muffin tin and chill in the freezer to set for about 20 minutes. For the topping, melt 1/2 cup chocolate chips and 1 tbsp tahini in the microwave in two 30-second increments, stirring in between. Remove the cups from the freezer, pour the melted chocolate mixture over them, and add more chocolate chips if desired. Freeze until fully set. When ready to enjoy, microwave your cups for about a minute (they taste best slightly melted) and add lots of toppings, such as a peanut butter yogurt bowl.
