Vegan Apple Pie Sugar Cookies

Set oven to 350°F and grease a cookie sheet. Cut an apple in half, dice one half into very tiny pieces, and place to the side. You can even toss in a food processor and give a few quick pulses if that’s easier! Save the other half for snacking later. In a bowl, add 1/2 cup coconut sugar, 1/2 cup softened vegan butter, 1 flax egg (made by mixing 2 tbsp ground flax with 1 tbsp water and letting it sit until gelled), and a splash of vanilla. Using a hand mixer, beat these until well combined. Then add 1 1/2 cups gluten free flour, a pinch of baking powder, sea salt, cinnamon, nutmeg, and ground ginger. Stir the dry into the wet until a sticky dough forms. If it’s too loose, add another tbsp or two of flour until it thickens up. Stir through the apple chunks here! Then chill dough in the fridge for a few minutes to set. Remove from fridge and use a cookie scoop to drop dough onto the sheet. Bake for about 10-12 minutes (you’ll want these as soft as possible while still being cooked inside). Let cool until just slightly warm to the touch before icing. For the icing, beat 5 tbsp of the vegan butter with 5 tbsp of coconut sugar, then spread it on the barely warm cookies. The result will be a melted glaze.
