Instructions

Soak 1/2 cup raw unsalted cashews overnight or for at least an hour in boiling water. Add the soaked cashews, 2 tbsp dijon mustard, 1 tbsp maple syrup, 1 tsp garlic paste, 1 tbsp apple cider vinegar, 1/3 cup olive oil, and sea salt to a high speed blender. Blend everything until uniform and smooth. Add water as you go to thin the dressing to your desired texture; add more for a runnier consistency or less for a thicker, dip-like texture.
