Vegan Chickpea Salad Wrap

For the chickpea salad: In a bowl, mash the rinsed and drained chickpeas to your desired consistency using a fork, leaving a few whole for texture if preferred. Next, mash in the avocado until well combined. Finally, add the chopped celery, diced red onion, dijon mustard, sea salt, and garlic powder, mixing until uniform. Adjust mustard and spices to taste. This recipe makes two servings and can be stored in the fridge in a glass container.

To assemble the wrap: Spread your cream cheese of choice onto a wrap. Layer the prepared chickpea salad and greens of choice on top. Roll up the wrap, cut it in half, and enjoy!
