Vegan Chocolate Chip Hazelnut Cookies

For the cookies: Follow instructions on the @simplemills chocolate chip cookie mix box, adding 2 tablespoons nut milk, 2 tablespoons vanilla, and 3 tablespoons coconut oil. Fold in 1/2 cup crushed hazelnuts at the end. Roll the dough into balls and place on a parchment paper lined cookie sheet. Bake for 10-12 minutes at 350°F.

For the chocolate coating: In a saucepan, melt 1 cup chocolate chunks and 1/3 cup coconut oil together over the stovetop until thick and smooth. Once the cookies have cooled completely, dunk half of each cookie into the chocolate mixture or drizzle it over the top. Let the coated cookies harden in the fridge for at least a half hour until set.
