A fun and delicious way to use up avocados, these vegan double fudge avocado brownies are made with maple syrup, almond milk, oat flour, and cacao powder, topped with a simple 2-ingredient chocolate ganache. You'd never guess they contain avocado!
Preheat the oven to 350F (175C) and grease a baking tin of choice. To a large bowl, add the mashed ripe avocado, maple syrup, unsweetened vanilla almond milk, and vanilla extract. Whisk until smooth. Then, stir through the oat flour, cacao powder, sea salt, and baking powder. Fold all ingredients together until well combined. Optionally, you can stir through 1/2 cup chocolate chips here. Transfer the batter to the prepared baking tin and bake for 30-35 minutes. Remove from the oven and let cool completely. For the 2-ingredient chocolate ganache: combine 1/2 cup chocolate chips and 4 tablespoons vegan heavy cream. Melt in the microwave for 35-40 seconds, then whisk until smooth. Pour the ganache over the cooled brownies and let it set in the fridge. These taste best warmed up.
