Vegan & Gluten Free Chocolate Chip Cookie Dough Cake Bars

Preheat oven to 350F and prepare a brownie tin. Mix the sugars, olive oil, yogurt, and vanilla in a bowl until well combined. Add in the vegan buttermilk and stir through completely. Will be a bit runny but that’s fine! Add in the flour, baking powder, and salt. Mix everything together and make sure to leave a few streaks of flour (aka don’t mix entirely) before stirring through the chocolate chunks. Transfer dough to the brownie tin and top with more chocolate. Bake for 35-40 min or until golden brown/shiny top. Let cool completely before slicing and enjoying!
