Vegan Peanut Butter Marshmallow Cloud Cookies

Set oven to 350°F. Make a flax egg by mixing 1 tbsp ground flax with 2 tbsp water and set aside. In another bowl, mix 1/3 cup creamy salted peanut butter, 1/3 cup maple syrup, and a splash of vanilla. Whisk until well combined, then stir through the flax egg once it has gelled. To the mixture, add 1/2 cup almond flour, 2 tbsp coconut flour, a pinch of sea salt, cinnamon, and baking powder. Once a sticky dough forms, stir in a few handfuls of marshmallows of choice until thoroughly combined. Drop batter in balls onto a greased cookie sheet and bake for 10-12 minutes. They'll be super doughy and soft, so make sure to let them cool completely before serving or storing!
