Vegan Red Velvet Brownies

Set oven to 350°F (175°C) and grease a brownie pan. Prepare flax egg: in a small bowl, mix 1 tbsp ground flax and 2 tbsp water, and let sit for 10 minutes. To a food processor, add the steamed beets, prepared flax egg, unsweetened applesauce, maple syrup, 1/4 cup almond milk, coconut sugar, olive oil, oat flour, pinch of baking powder, pinch of sea salt, cacao powder, and a splash of vanilla extract. Blend until a smooth, thick batter forms. Stir through chocolate of choice and pour batter into the prepared brownie pan. Bake for about 40 minutes and let cool completely. For the icing, mix 1/2 cup powdered sugar, 2 tbsp melted coconut oil, and 2 tbsp almond milk together and drizzle over the cooled brownies.
