Instructions

Toast two slices of sourdough to your liking. Spread/layer on the following ingredients: pesto of choice (mine is vegan), two slices of cheese (I used vegan provolone), slices of avocado, hummus (I used garlic), roasted red peppers, and arugula. Sandwich the pieces together. Brush both sides with butter or oil of choice. Cook on the stovetop for 2-3 minutes on each side or until crispy and the cheese has melted. Slice and enjoy!
